瘦肉變滑肉:
(蝦米冬菇蒸肉餅)
材料:
瘦肉1/2磅
冬菇6隻
蝦米3湯匙
處理:
1. 瘦肉切開1舊舊,洗淨,擎乾水。
2. 冬菇浸軟。
3. 蝦米浸水3分鐘。
4. 預備攪拌機。
5. 放冬菇入攪拌機內打碎。
6. 加入瘦肉,攪3下。
7. 蝦米浸好,放入肉碎及冬菇內。
8. 急凍蝦仁,拍扁,啄幾下。
9. 調味:
a. 生粉1茶匙
b. 油1茶匙
c. 鮑魚汁1茶匙
d. 豉油1/2茶匙
e. 糖1/2茶匙
攪勻,放上碟。
烹調:
1. 大火煲滾1鑊水。
2. 大火蒸豬肉12分鐘。
3. 完成。
Steam pork pie:
Ingredients:
Lean pork meat1/2 lb
Mushrooms 6 Nos.
Dried sea shrimps 3 tbsp
Preparation:
1. Cut pork into pieces. Rinse thoroughly and hang dry.
2. Soak mushrooms well.
3. Soak dried sea shrimps with tap water for 3 minutes.
4. Get blender ready.
5. Put mushrooms and get it blended.
6. Add pork meat, blend 3 times.
7. Sea shrimps has been soaked well. Mix well with pork and mushrooms.
8. Frozen shrimps, beat well and chop several times.
9. Season the meat pie:
a. Tapioca starch 1 tsp
b. Oil 1 tsp
c. Abalone sauce 1 tsp
d. Light soya sauce 1/2 tsp
e. Sugar 1/2 tsp
Mix well. Put on plate.
Step:
1. Heat up a wok of water at high flame.
2. Steam pork at high flame for 12 minutes.
3. Complete. Serve.
