Hi everyone!
A super-tender cottage cheese & coconut-flour pie with apple slices — 100 % sugar-free and wheat-free! Light and airy cottage-cheese base, beautiful apple “rose” on top brushed with coconut oil.
Recipe for cooking and ingredients:
For the pie:
• 200 g (1½ cups / 7 oz) soft cottage cheese (5–9 % fat)
• 2 eggs
• 1 tbsp stevia (or any 1:1 sugar substitute)
• 4–4½ tbsp (≈ 40–45 g) coconut flour
• 1 tsp baking powder
• 1 medium apple → core removed, sliced into thin wedges
• A little coconut or olive oil (for greasing)
For the tea:
• 1 slice of lemon
• 1 cinnamon stick
• 2 tbsp green or vitamin tea
• Boiling water (steep 4–6 minutes)
Pan:
• 16×11 cm (6×4 in) → greased + parchment on the bottom
• 180°C (360°F) — 25 minutes
Instructions
1. Whisk cottage cheese + 2 eggs + 1 tbsp stevia.
2. Add 4–4½ tbsp coconut flour + 1 tsp baking powder and mix well.
3. Grease the pan with oil and line the bottom with parchment.
4. Spread the batter evenly.
5. Arrange thin apple wedges beautifully on top.
6. Lightly brush the apple slices with coconut oil.
7. Bake at 180°C (360°F) for 25 minutes until lightly golden.
8. Tea:
o Add lemon slice + cinnamon stick + 2 tbsp green tea to a teapot.
o Pour boiling water and steep 4–6 minutes.
9. Serve:
o Our fragrant, healthy pie is ready!
o It’s healthy and incredibly delicious – you can make it for any holiday!
Serving & Storage
• Serve warm or fully cooled – both ways are fantastic.
• Keeps in the fridge up to 4–5 days.
Diabetic tips
• Coconut flour + cottage cheese = almost zero glycemic load.
• Net carbs per slice ≈ 5–6 g.
• Optional: add ½ tsp cinnamon to the batter – even healthier!
